Anda (Egg) Paratha Roll

One morning, Maryam woke up inspired to make breakfast. She walked into the kitchen, on a mission. The end result was this flaky anda paratha roll. The egg actually melts into the flakes and is super flavorful. And, apparently, it’s also a street food in Pakistan and India!
Anda Paratha Roll
Prep Time: 10 MINUTES Cook Time: 5 MINUTES Serves: 2
Paratha Dough
1 cup all purpose flour
1 cup wheat flour (atta)
1/2 cup water (add more as needed)
Egg
3 large eggs
1/2 roma tomato
1/2 small onion
A few stems cilantro
3 green chiles
1/2 tsp chili powder
Salt to taste
Half stick butter (melted)
All purpose flour for surface
Olive oil
Special Equipment:
KitchenAid Stand Mixer, a good stand mixer is a game changer and makes dough making soooo much easier
Preparation:
Making the dough
Put all of the paratha ingredients into the a bowl or stand mixer and knead the dough until smooth and sticky. You will need to add more water as necessary to get a soft but sticky consistency
Place dough in a lightly oiled bowl and cover, set aside for 20-30 minutes at room temperature
Preparing the egg
Crack the eggs into a bowl and lightly beat
Roughly chop tomato and onion and add to bowl with eggs
Roughly chop cilantro and green chiles and add to bowl
Add salt and chili powder and beat the egg well. Set aside while you now make the paratha
Making the parathas
On a floured surface, remove dough from bowl and cut in half. Form balls with the dough and set aside
Grab a dough ball and press it flat. Grab a rolling pin and roll out the dough into a circle, about the size of a dinner plate
Cut the flattened dough into strips and lightly brush with melted butter
Starting from the top, roll each strip and then roll the next one on top of it. The end result should look like a cinnamon roll.
Flatten out the rolled dough and roll out again with a rolling pin. Repeat with the second ball
Making the paratha roll
Preheat a skillet on medium heat
Add oil to the pan and add a paratha. Let it cook for a 2-3 minutes
Oil the top of the paratha and then flip, letting it cook for another 2-3 minutes
Flip the paratha back over and add half of the beaten egg mixture, carefully flip one last time
Remove the paratha into a plate, egg side up, and roll it up
