Al-Baik Garlic Sauce

Al-Baik’s garlic sauce is like an aioli, but better. It can be a little tricky to make but once you get it, you’ll realize all those failed batches were worth it. Pairing perfectly with our Al-Baik Fried Chicken, but really with anything else that you can dip in it.
Al-Baik Garlic Sauce
Prep Time: 7 MINUTES Serves: 2-3
100mL whole milk
4 cloves garlic, roughly chopped
1 cup vegetable oil (or neutral oil of choice)
Zest of 1/2 lemon
Salt
Special Equipment:
Hand Blender, keeps the process clean and is honestly the most consistent way we’ve found
Preparation:
Add milk, garlic, and vegetable oil to cup
Put hand blender to the bottom of the cup and run on medium speed for 5 seconds. Then slowly move the blender up and down and run for another 3-4 minutes, or until the sauce has thickened up and has a mayo-like consistency
Add zest of half a lemon and a few pinches of salt. Blend for a few seconds and taste, add salt as necessary
Put into an airtight container and refrigerate (should last 3-4 days in the fridge). Once it has cooled, the sauce has a nice and thick consistency and is ready to go!
