Grilled Tenderloin Kebabs

To kick-off our grilling series, we couldn’t think of anything better than these grilled tenderloin kebabs. Since we’re using tenderloin, its naturally tender as is, but with the marinade it becomes even more tender and perfectly flavorful. The ingredient list seems daunting, but the recipe is deceptively simple. Plus, you’ll thank yourself once you take your first bite.
Grilled Tenderloin Kebabs
Prep Time: 10 MINUTES Cook Time: 12 MINUTES Serves: 1
1 lb beef tenderloin, cubed
1 tsp salt
Black pepper
1 tsp onion powder
2 tsp garlic powder
2 tsp chili powder
2 tsp Aleppo pepper (or Cayenne)
2 healthy pinches of garam masala (all-spice or 5-spice also work)
Juice of 1 lemon
1/2 cup vinegar
1/2 cup jalapeno brine (or more vinegar)
1 cup olive oil
1/2 large onion
1 tsp high heat oil (Avocado, Vegetable, Crisco, etc.)
Skewer vegetables of choice (we like bell pepper, tomatoes and onions)
Special Equipment:
Stainless Steel Flat Skewers - We love the flat skewers because they’re easy to handle and flip, and good quality stainless steel skewers are long lasting.
Preparation:
Get your grill preheating
Put your tenderloin in a bowl and add salt and pepper
Combine the onion powder, garlic powder, chili powder, and Aleppo pepper
Add as much of the spice mix to the beef as you would like, stir to coat pieces evenly
Add 2 healthy pinches of garam masala
Add lemon juice, vinegar, jalapeno brine, and olive oil. Stir to combine
Rough chop your onion and toss into a blender. Pulse blender a few times to blitz the onions. Add to bowl and mix everything well to evenly coat the beef
Cover the bowl and put in fridge for up to 24 hours (the longer the better). If you don’t have time, let marinade at room temperature for at least 30 minutes.
Note: Bring your beef out of the fridge for at least 30 minutes before grilling to let it come back to room temperature. Room temperature beef cooks more evenly.
Add your beef and vegetables to your skewers. Leave a little bit of space between pieces, this allows the pieces to cook evenly.
Note: Save your marinade, we’ll be using it
Get your grill ready - set it to medium heat (~375°F) and brush with a little bit of oil. Add skewers and cover
After 5 minutes, lightly dab tops of skewers with a little more oil and flip all skewers over. Spoon a little more marinade over each of the skewers and cover again
After another 5 minutes, flip skewers one more time and spoon over marinade. Cover
After about 2 minutes, your kebabs should be done. Remove from the grill and let sit for 2-3 minutes untouched
Make them look pretty, add them to a side, or let people eat right off the skewer. Enjoy the compliments of everyone who’s eating them
