Chopped Cheese

For the uninitiated, chopped cheese is a New York exclusive. Sort of resembling the marriage of a burger and a Philly cheese steak, it’s an explosion of flavors in every bite. We discovered this in the bodegas of Brooklyn and absolutely needed to remake it for ourselves.
Chopped Cheese
Prep Time: 10 MINUTES Cook Time: 8 MINUTES Serves: 1
1/2 lb ground beef
Salt
Pepper
1 tsp Neutral oil (Avocado, Walnut, Crisco, etc)
Mustard
1/2 jalapeno, sliced
1/4 onion, sliced in rings
4 slices thin cut tomato
Ketchup
3 slices provolone cheese
1 hoagie
Butter
Chutney (optional)
Special Equipment:
Cast iron skillet, makes for great crust on the patties
Grill press, evenly smash the balls into patties
Preparation:
Heat cast iron skillet to med-high heat
Form a meatball with the ground beef and generously season with salt and fresh cracked black pepper
Add oil to the pan and place meatball in pan
Smash meatball down with a spatula to form burger patty
Drizzle mustard on top of burger and let cook for 2-3 minutes
Reduce heat to medium and flip burger, gently smashing again
Add jalapeno, onion, and tomato slices on top of patties and let cook another 2 minutes
Add a little ketchup and chop up all ingredients in the pan
Mix well, continue to cook another 2 minutes
Reduce heat to low (or turn off heat all together) and shape beef into a roll
Overlap cheese slices and let melt
While the cheese melts, spread butter onto hoagie and toast
Transfer chopped cheese into hoagie and bask in all your glory
