Nihari Pizza

Nihari is traditionally a party dish, which means leftovers. A lot of them. We love ourselves some leftover nihari (it tastes even better the next day) but we eventually we wanted to see if there was something different we could do with it. Enter, Nihari Pizza. Its a weird concept, we know it as well as anyone else. But its easily one of the most unique and delicious things you’ll ever have.
Nihari Pizza
Prep Time: 30 MINUTES Cook Time: 7 MINUTES Serves: 4
2 cups nihari
16 oz pizza dough
All purpose flour (for rolling surface)
2 oz provolone cheese, shredded
2 oz colby jack cheese, shredded
1 jalapeno, sliced
1 inch ginger, cut into matchsticks
1/2 onion, cut into rings
2 tbs butter
1 clove garlic, minced
Cilantro (for garnish)
Zest of 1 lemon (for garnish)
Special Equipment:
Pizza stones, highly recommended for a crispy crust
Pizza rocker, to easily cut slices
Microplane, makes zesting lemons a breeze
Cooling rack, let’s the pizza cool a little without making the rust soggy
Preparation:
Follow instruction for pizza dough to prepare for use
Place pizza stones in oven and set oven to highest temp (usually 500° F) and let heat for at least 30 minutes
Place a skillet or pot on med-high heat and add nihari
Let reduce for 15 minutes, or until nihari is roughly the consistency of pizza sauce
Remove nihari sauce into bowl and set aside
Place butter and garlic into a small bowl and melt until softened
Split dough into two 8 oz balls
Lightly dust the counter and dough with flour and roll out dough into 2 pies
Remove pizza stone and quickly place rolled out dough on top
Spoon on the nihari sauce and sprinkle with cheese and toppings (jalapenos, ginger, onions)
Place pizza stone in oven and cook for about 7 minutes, or until crust starts to brown
Remove pizza from oven and place on cooling rack, brush the crust with the garlic butter
Garnish with hand torn cilantro and lemon zest for a bite of freshness
Cut and serve!
