Sometimes you don’t have time to marinate things overnight, you have a hungry crowd, a grill, and some basic ingredients. This recipe delivers a delicious bunch of flavors, with minimal prep work. It was so good, when we gave it to the crew to taste when shooting the video, everyone was in awe! So, we invite you now to wow your own guests, or just yourselves, next time you jump in the kitchen.

 

Lemon Dill Chicken Skewers

Prep Time: 30 MINUTES Cook Time: 12 MINUTES Serves: 2

  • 2 tbsp ginger and garlic paste

  • 1 tbsp yogurt

  • 1/2 tsp crushed red pepper

  • 1/2 tsp onion powder

  • 1/4 cup chopped dill

  • 1 lb chicken cubes

  • 1 cup olive oil

  • Juice of 1 lemon

  • 1/2 tsp sea salt

  • 1/4 tsp black pepper

  • Oil

Special Equipment:

  • Stainless Steel Flat Skewers - We love the flat skewers because they’re easy to handle and flip, and good quality stainless steel skewers are long lasting.

Preparation:

  1. In a large bowl mix ginger and garlic paste, yogurt, crushed red pepper, onion powder, olive oil, and lemon juice

  2. Once mixed well add salt, pepper, and dill

  3. Add chicken to the bowl and mix well to make sure chicken is evenly coated

  4. Let the chicken sit for 15-30 minutes, while the grill heats up

  5. Place chicken on skewers (saving the marinade) and place on the grill at med-high heat

    • Note: Make sure to lightly oil the grill with a high heat oil before placing the skewers

  6. Drizzle the remaining marinade on top of the chicken and cover to cook for 6-7 minutes

  7. Flip chicken and let cook another 5 minutes, until the chicken is cooked through

  8. Remove from heat and serve hot with your side of choice (like our rice)!
